Staff Hiring: Too Many Cooks in the Kitchen

Many Pubs and Restaurants struggle to find the right number of members to work in just right jobs at just the right time and very few ever master the struggle and reach staffing “utopia.” Those that do attain favorable staffing levels and stability tend to experience it only briefly. The mistake is adopting an oversimplified and reactionary approach: If the work falls behind or one is pleading for help, they add staff. if overhead expenses grow too high, they cut them.  This backward-looking approach creates a pendulum effect that results in having either too many or too few staff members on board. New Irish pub offers ‘quality and consistency’

Corgans’ Publick House greeted customers Tuesday for its grand opening in a traditional Irish way: lots of laughs, food and beer. A JMU ’06 graduate and co-owner, Katharine Corgan knows first-rate Irish cuisine. Her grandfather, Frank Corgan, was from Belfast, Ireland, and owned a produce company in Manhattan. “I wanted to open a pub because it’s my favorite type of bar: cozy and inviting,” said Corgan, 27. “I also wanted to pay homage to my family, and there were no good Irish places around here.” Corgan, along with co-owner Vito Pellerito, thinks their devotion to authenticity will distinguish them from other failing bars and restaurants in this economic decline and put them ahead of the rest. Building for sale, but Patsy Fagan’s is staying

Although the historic George Washington Tavern building is for sale, the business that is operating there isn't. Owner Suzanne Cahill said that Patsy Fagan's Irish pub won't be moving or closing. "I'm not going anywhere," Cahill said. "I want people to know that." The landmark 18th-century, limestone building at 1002 Cumberland St., is listed by NAICIR Commercial Real Estate Services for $599,000. There are five leased apartments on the second and third stories. There is a prospective buyer, Cahill said, and that person wants her to stay. Cahill is also hoping to bid on the property. "Either I'm buying it or whoever's buying it will let me stay," said Cahill, who plans to celebrate Patsy Fagan's third anniversary at its current location in March. "The bar is doing good." Easier to find Irish pub abroad than at home as demand grows

ENJOYING the craic at the local may be top of the wish list of overseas visitors to Ireland. But if current trends continue, foreigners may have a better chance of finding a decent Irish pub in their own country. Demand for Irish-style boozers abroad is so high that, on average, one new Irish theme pub is opening up every three days. The upward trend is in marked contrast to here, where more than 1,500 pubs have closed in the past five years. But leading specialists who build and design Irish pubs abroad said business is still as brisk as it was in the boom years. Stroudsburg's Hideaway Cocktail and Tapas Bar looks to attract working professionals

The Hideaway Cocktail and Tapas Bar — the last piece of the Galmay Corp’s business project at 700 Main St. in Stroudsburg — will have a grand reopening today at 5:30 p.m. The event includes a complimentary wine tasting conducted by Southern Wine and Spirits, which is expected to become a monthly feature, and the unveiling of seven brands of Scotch unique to the area.
