Irish Pubs Global Gathering Paris May 2016

With the Arc Du Triomphe looming in the background, not even the atypically miserable Parisian weather could dampen our spirits as we gathered at the Irish Embassy for the first ever Irish Pubs Global Gathering in Paris. While the rain brought all city traffic to a standstill and rendered a handful of confirmed attendees hor's de combat we we're honoured to have delegates from Paris, Lorient, La Rochelle, Cannes, Montpellier, Bordeaux and Brussels present. All in all, close to 30 pubs were represented. All roads leading to Dublin this September for another excellent Global Gathering, it was crucial to meet and learn firsthand of the challenges and opportunities facing the Irish Pub owners and operators in France. Scheduling Kitchen Labour Effectively

Of all the difficult costs to control in your pub, kitchen labour is one of the most challenging. In many respects, your kitchen, and the food that comes out of it, are the engine that drives your business, so you have to be careful about any changes you make that might have a bearing on morale or quality. Pub Spotlight: Scholars Lounge Rome

Situated just off Rome’s central Piazza Venezia, Scholars Lounge can boast to be the most famous bar in Rome. Started in September 2005 by Declan Crean and Celestino Cucchiarelli, the bar has become a staple of nightlife in the Eternal City. Crean is no stranger to bars, having pulled his first pint in his uncle’s bar "The Vicarstown Inn", in Co. Laois at age 12 and having worked in bars in Dublin, Hamburg, Milan, Paris, Basel and Rome. 6 Tips For Minimising Waste In Your Kitchen

Waste or shrinkage is a feature of any kitchen, accounting for anything between 1%-2% of food sales. However, if your waste percentage is more than that or you have a gut feeling that there is more waste or shrinkage than there should be, consider the following: Minimise the amount of food you are keeping in your freezer. Freezers can become a convenient storage area for food items that will eventually be dumped because they've been there for so long. Use up items in your freezer for specials and features. Replace your black garbage bags with clear plastic bags. Ensure that everyone sees what is getting thrown out and prevent any concealment.
