Dublin popup bar, Bar 1661 is Ireland’s first Poitín bar. Now entering it’s third week, Bar 1661 is continuing to push the boundaries and change perceptions of what is now being viewed as a bright future for Irish Poitín. Not satisfied with holding the world’s largest collection of Poitín, they are now attracting talent from the world’s top bars.

Joining Bar 1661 for the next four weeks is famed Irish bartender, Alan McGillivray. Fresh from his stint in opening Blacktail, NYC, the worlds “Best New Cocktail Bar”, (awarded at both Tales of the Cocktail, New Orleans and World’s 50 Best Bars, London 2017) Alan has elevated himself amongst the elite of Irelands best bartenders. Sister bar to Dead Rabbit, NYC, where Alan underwent a six-month training program, Black Tail has raised the bar for all new cocktail bars opening west of the Atlantic and cemented Dead Rabbit founders, Sean Muldoon and Jack McGarry amongst some of the very best operators in the world.

When hearing of Alan’s return to Ireland, Bar 1661 Founder Dave Mulligan says he was on the phone to him within 20 minutes, “We don’t have many of his pedigree, I had to get him in and was delighted when he jumped at the opportunity to be involved. I take it as a compliment for what we are trying to achieve that we can attract the likes of Alan to the bar”.

The duo will be launching the bars second menu with a continued focus on underutilized Irish ingredients. Dave Mulligan says “We are taking a risk with so many menu changes in such a short period of time, especially after the first was so well received. Fortunately, we didn’t really have any other option with so many ingredients let alone Poitíns to choose from. With the team assembled, I’m not worried, Alan is now one of the most experienced bartenders in the county and we are lucky to have him”.   

Open Thursday to Sunday from 17.00 till late until the 26th of November, Bar 1661 is situated next door to Berlin Café, Dame Lane in between the gates of Dublin Castle and The George Pub. Walk-ins are welcome though booking is advised due to limited seating.
