A new Chicago Irish Pubs Global Chapter has been formed following a historic informal at the Emeral Loop Bar hosted by Kevin Vaughan. It was attended by Aidan Cronin, Consul General for Ireland and Tom Hayes of Enterprise Ireland, together with Enda O’Coineen
Indeed to seal the occasion, Michael Carey Chairman of Bord Bia and Oliver Hughes of the Porterhouse would have been there – however due to a thunderstorm that lashed Chicago their plane was diverted to Milwalkee !
Going forward, Kevin Vaughan has kindly agreed to act as Hon. President for the founding stages. He will be supported by new Vice Presidents Vincent Tuohy and Kieran Ahern to make a three person steering group.
Kevin represents Vaughan Hospitality, they operate several successful pubs in the Chicago area, while Vincent runs two pubs, The Irish Legend and Kieran runs the Fado Group in the area,
An initial target is to get 10 owners and managers from the new Chicago Chapter to the Irish Pubs Global Gathering end September next. With a membership base in the area of a diverse range of over 60 Irish pubs, this should be achievable. The Chicago trip to Dublin will also, it is hoped, be a catalyst for mutual benefit to develop business in Chicago as part of the Global Network.
” Sure if the Italian Fish and Chip shop owners in Dublin can come together for a very successful “Italian Fish & Chip Shop Day” surely we can get the industry ‘ pulling together in Chicago” says Vincent Tuohy!
Kevin says that following a tough period in 2010 and 2011 business is now going extremely well for the pub business in Chicago. ” We fight for every dollar, food is increasingly more important and before we used to have to discount to keep business but now we are happily getting away from this as the market improves” Kevin added while looking forward to helping connect Chicago pub owners, locally together, with Ireland and the rest of the World,
