His titles include owner and director of beverage consultancy company "Total Cocktail Solutions", Creator and Manager of "Irish Cocktail Club", Brands and Education Spirits Ambassador at Edward Dillon & Company Ltd. representing Bacardi Brown-Forman, Moët Hennessy, and Irish Bartender of the Year 2005/2006/ 2007/2008. With 20 years of industry experience, Alan is a specialist in mixology, beverage programs and training, venue concept and design. He has visited and worked at national and international events in over 35 countries worldwide.

Donal Ballance

Donal Ballance, Ballance Hospitality. Donal has been involved in the development of Irish Pubs globally since the early 1990's. He is a career foodservice and hospitality specialist with a background that includes senior management roles with PepsiCo Foodservice, Compass Group, Guinness and Diageo. He understands the Irish Pub industry from many perspectives, as an owner, as a multi-unit operator and as a consultant. He became involved in the development of the Irish Pub Concept through his management of Guinness retail operations in Ireland and the UK and was part of the team responsible for taking the concept to a global platform. In 1999, he moved to North America and formed an independent consulting practice, Ballance Hospitality www.ballancehospitality.com, which provides a range of operational and development services to Irish Pub operators throughout the United States and Canada.

Cathal Dolan

Cathal Dolan Founder, GizaGig.com, Musician and Entertainer Upon leaving D.I.T. at 19, Cathal opened a night club and live music venue in his native Dundalk. The experience led him to furthering his own musical ambitions, with extensive touring around Europe, before owning and managing one of Ireland’s largest marketing & promotional merchandise companies, Bright Promotions. Although he had continually performed on a semi-regular basis since his mid-teens, he returned to it on a full-time basis in 2015. At the same time, he also began helping some local pubs with their booking and promotion of live entertainment. His experiences working on both sides of the live entertainment spectrum led him to found GizaGig.com

Seamus McHugh

Seamus McHugh, International Sales & Marketing Manager, CBE. Having graduated from college with a Degree in Computer Science, Seamus spent a number of years working as a web developer and computer programmer. Seamus joined CBE in 2002 as a sales consultant working with hospitality clients as they looked to implement IT solutions within their business to improve operations. Seamus was promoted to the role of Sales & Marketing Manager in 2010 and International Sales & Marketing Manager in 2014. Within his role he liaises directly with CBE’s consultants, partners and customers alike. Seamus has a wealth of knowledge of the hospitality sector on how to implement and utilise IT solutions to reduce costs, improve operations, increase margins and grow the bottom line.
